Collection: Chile<tc>pepper</tc>

We specialize in peppergrains, but despise the chilipepper no. You will find the pure chili with uspepper from French Basque Country, for example. Since 2016, we have been selling the Piment d'Espelette from Aïnhoa, a small town on the Spanish-French border. This Espelette is a coarsely ground 'powder' manually harvested, processed into the powder (Piment d'Espelette), into a purée and a tasty jelly, entirely in line with the culinary traditions of French Basque Country.

Chilepepper is also incorporated into some of our blends: the Japanese togarashi chili in Shichimi, the Indian teja-pepper in Punjabi masala, the kashmiri chili in Kashmiri masala, the smoked jalapeño chili in our Adobo chipotl and Aleppo chili (pul biber) in Baharat.

The newest chili addition to our range is the to notice or merquén, the diplomatic, or rather strategic, response of the Chilean Mapuche to the violent conquest of their land by the conquistadors, the merging of their goat-horn chili with the coriander and cumin brought from Europe. One of the classic examples of the 'Columbian exchange' of products and customs from the Old and New Worlds.
