Bahārāt is a spice blend that is used not only in the Middle East but also in other Arab cuisines, including in North Africa.
It is believed that bahārāt originated when the nomadic Bedouins added new herbs and spices to their spice blends whenever they encountered them. As a result, there is not just one bahārāt; instead, many variations of this spice blend circulate in the Arab world, each with a slightly different 'touch', but fundamentally containing the same ingredients. A related blend is fulful bhrat, which is used in the preparation of Kibbeh.
The mixture is characteristic of the entire Mashriq, that is, the Arabic-speaking countries east of Libya, and of Turkish and Kurdish cuisine. Outside of that, we see a simple Bahārāt in Tunisia, one of the countries in the Maghreb, which consisting only of dried rosebuds, cinnamon and black pepper consists.
In Turkey, bahāt is used to season kofte and pilafs, and mint is added for this reason. In the countries bordering the Persian Gulf, saffron and dried black lime (loomi) are also added.
The following ingredients are used in a bahārāt:
- pul biber
- black pepper and/or
- long pepper
- coriander seeds
- clove
- chili pepper
- cinnamon
- green cardamom
- rose petals
