New in depeperwinkel`! Mitmita - ሚጥሚጣ - An Ethiopian spice blend that is used in various ways, on its own (as a dip) and incorporated into other spice blends, including berbere. The main ingredients are chili.pepper (birds' eye), salt, koraima and cumin.
Very hot!
More than any other country, Ethiopia has a tradition of integrating elements from other cultures. As early as the time of the Egyptians, this part of Africa was the center of the spice trade from the Orient, which was mixed with the most diverse spices and herbs native to the region, such as korarima. In that respect, mimitma is simple in composition, sometimes limited to just chili.pepper and salt, in our case seasoned with lightly roasted
- kunitali - cumin seed,
- corrorima (korarima) - Ethiopian cardamom,
- rosemary,
- koseret - verbena, and
- k'unido beriberē - black pepper
Scent and taste
Mitmita is spicy, salty, and herbaceous. Use it sparingly and get used to it. If you can't stand the heat . . . As mentioned, Mitmita contains salt; that is a significant factor. Keep this in mind when dosing: too much salt is never good!
Usage
Sometimes garlic, cinnamon, or cheese is also added to mitmita, depending on what it is used for. It is fun to experiment with. For example, on injera bread, over broad beans, and over kitfo—see photo—a preparation of raw meat, traditionally cut into chunks or strips, finely chopped in the urban way, just like steak tartare!
