Our Chinese peppers are Characteristic of Szechuan cuisine, one of the ten classical Chinese cuisines. Dishes from this cuisine to be named 'málà', a compound of the words má, meaning tingling, and là, the term for sharp, spicy. Tinglingly sharp, like a Szechuanpepper is supposed to be.
