Advieh berenj, or simply advieh, is a spice blend primarily used in rice dishes. It's a classic Persian spice mix that comes in various forms, such as Indian garam and Moroccan ras el hanout.

This advieh berenj is a variation on the famous adviehs of the highlands, to which pistachios and saffron are usually added. In what is considered the standard of classical Persian cuisine, The legendary cuisine of Persia Margaret Shaida gives the following classic recipe:

  • green cardamom
  • pistachios
  • black pepper
  • cinnamon
  • saffron
  • rose petals and
  • some sugar

The use of rose petals originates in the northwest of the country and the Persian plateau. This advieh mixture gives rice dishes a characteristic aroma when sprinkled over the grains of rice while they are steaming (!).

Smell and taste

Our advieh berenj follows the classic recipe, with the addition of a warm note of nutmeg. Saffron and pistachios are omitted—often already included in the recipe—but can, of course, be added to taste. The aromas of this advieh are best expressed when prepared as described above while steaming the rice is added, and not, as is often suggested, used as a topping for steamed rice, as you do with a Japanese furikake, although that is of course possible.

Suggestions for use:

  • during the preparation of rice:
  • Persian rice (berenj) with crispy crust (tahdig)
  • Persian pilaf (polov)

Features:

  • this advieh berenj contains: cinnamon, nutmeg, green cardamom, cumin, black pepper, lemon myrtle, turmeric and rose petals,
  • contains no preservatives, sugar or salt,
  • origin: classical Persian cuisine (Iran, Iraq)
