Advieh berenj, or simply advieh, is a spice mixture that is mainly used in rice dishes. It is a classic Persian spice mixture that has different compositions, such as the Indian garams and the Moroccan ras-el-hanouts.

This advieh berenj is a variation on the famous advieh of the high plains, to which pistachios and saffron are usually added. In what is considered the standard of classical Persian cuisine, The legendary cuisine of Persia Margaret Shaida gives the following classic recipe:

  • green cardamom
  • pistachios
  • black pepper
  • cinnamon
  • saffron
  • rose petals and
  • some sugar

The use of rose petals has its origins in the northwest of the country and the Persian plateau. This advieh mixture gives rice dishes a characteristic smell when the advieh is sprinkled over the rice grains while the rice is steaming (!)

Smell and taste

Our advieh berenj follows the classic recipe, with the exception that a warm accent has been added in the form of nutmeg. Saffron and pistachios are missing - often already included in the recipe - but can of course be added to your own taste. The aromas of this advieh are at their best when it is added as described above while steaming the rice, and not, as is often suggested, used as a topping of steamed rice, as is done with a Japanese furikake, although that is of course possible.
