Piper borbonense, a woody climber, grows on the islands off the coast of Africa. In Madagascar, they call it voatsiperifery. pepper (voa) of the pepperrank ((tsiperifery)The small, stemmed berries are fruity and quite tart.

The pepperThe species Piper borbonense is also called Cubeba borbonensis because it is related to the cubebpepperThe sharpness of this pepper is the same as with black pepper and long pepper Through pepperoil (piperine) determined. Because of the botanical name and the link with Madagascar, it seems obvious that pepper bourbonpepper to mention, but that name is already used for the fruits of the Schinus molle, a relative of the pistachio nut. This is also called Peruvian pink pepper named.

The plant is native to the tropical forests of Madagascar, Réunion, Mauritius, and the Seychelles, islands off the east coast of Africa, and rarely, if ever, found on the continent itself. Picking the fruits is no easy feat; the vines grow wild or semi-wild as lianes up trees to a height of 10 meters or more. The fruits are located at the end of the vines on the young shoots, high up in the vines. The fruits are 5 mm in size and round, slightly smaller (3 mm) after drying. The white peppergrains are a fraction smaller.

In Madagascar, about one and a half to two tons of voatsiperifery are harvested annually, for a pepperVery few varieties exist. Because the fruit is only harvested in the wild, there is no organic labeling for voatsiperifery. Voatsiperifery is included in the "Ark of Taste."

Smell and taste

Just like the cubebpepper Voatsiperifery is fruity and aromatic, with a hint of camphor (white voatsiperifery is less camphorous). White voatsiperifery distinguishes itself from other white peppers by its aroma and pungency.

The aromas of a peppergrains are released as soon as the peppergrain is ground. Don't cook voatsiperifery for too long, even though it's known for retaining aromas, to maximize its unique character.

Usage

White voatsiperifery can be used whole or ground. It is a versatile white pepper. Adjust your dosage to the sharp nature of this special pepper.

Suitable for delicate vegetables such as courgettes, cucumbers and beans, in creamy soups and sauces and as a tablepepper.
