Our green pepper is a freeze-dried, unripe pepper. Thanks to the freeze-drying process, the original flavor of the green pepper berry is optimally preserved.

Freeze-drying is the most expensive method for preserving pepper. It's worth it, because not only is the flavor preserved, but the freeze-dried berries are easy to rehydrate and have a longer shelf life than oven-dried berries. Green currants. Because the skin doesn't wrinkle, the berries remain smooth even after they've absorbed plenty of moisture, as if they'd never dried out.

We're often asked why not all freeze-dried berries have the same green color. That's nature's way. No dyes are used, so the color ranges from pale green with a hint of yellow to brown and bright green. If you're looking for color, select the greenest ones yourself.

We already mentioned (re)hydrating the berries. This isn't necessary; you can also grind the dried berries, for example, for use in delicate dishes, like sole. But in many cases, you'll want to use the berries whole in the dish, whether it's a pate, pie, soup, or sauce. In those cases, let the berries sit in the desired liquid for half an hour before using.

You can use plain tap water, brine (a little salt dissolved in water), broth, even vermouth or spirits. Pickled berries are delicious with lamb dishes and in curries, and berries hydrated in broth are great on your steak. But there's another way. Think of a spiced crème fraîche: green berries, a few chervil leaves, and/or finely chopped chives. Delicious with rabbit and palaissons or reibkuchen.
