Freeze-drying is the most expensive method to pepper to preserve them. That pays off, because not only is the flavor preserved, the freeze-dried berries are easy to rehydrate and last longer than the oven-dried ones. Green berries. Because the skin does not wrinkle, the berries remain smooth even after they have absorbed plenty of moisture again, as if they had never been dried.
We are often asked why not all freeze-dried berries have the same – green – color. That is nature. No dyes have been used, causing the color to vary from pale green with a yellow tint to brown and fresh green. If you are looking for color, please select the greenest specimens yourself.
We already briefly mentioned (re)hydrating the berries. This is not necessary; you can also grind the dried berries, for example for use in delicate dishes such as sole. However, in many cases, you will want to use the berry whole in the dish, whether it is a pâté, pie, soup, or sauce. In those cases, let the berries soak in your desired liquid for half an hour before use.
For this, you can simply use tap water, brine (some salt dissolved in water), stock, or even vermouth or spirits. Pickled berries are delicious with lamb dishes and in curries, or berries hydrated in stock on your steak. But there are other options too. Consider a spiced crème fraîche: green berries, some chervil leaves, and/or finely chopped chives. Delicious with rabbit, palaissons, or reibkuchen.
