Mulled wine

Ingredients

  • 750 ml red wine
  • 1 stick Ceylon cinnamon or max. 5 cinnamon sticks
  • 4-5 cloves
  • 3-4 green cardamom
  • 1-2 star anise fruits
  • chopped peel of half an organic orange
  • honey, agave syrup, cane sugar or birch sugar (xylose)

Preparation

Crush the cardamom and lightly toast it with the cinnamon, cloves, and star anise in an ungreased skillet. Meanwhile, heat the wine in a separate pan. Do not bring to a boil!

Remove the spices from the pan. Crush the cloves and star anise, and break the cinnamon sticks or crush the cinnamon sticks. Add the spices to the mulled wine and let it steep, covered, for fifteen minutes on the heat. Then add the orange zest. Let the wine steep for another five minutes, then strain the spices and zest from the wine. Sweeten the wine to taste.
Serve the mulled wine well warm in a heat-resistant glass or a cup.
