- 750 ml red wine
- 1 stick Ceylon cinnamon or maximum 5 cinnamon buds
- 4-5 cloves
- 3-4 green cardamom
- 1-2 star anise fruits
- cut peel of half an organic orange
- honey, agave juice, cane sugar or birch sugar (xylose)
Crush the cardamom and lightly roast it with the cinnamon, cloves and star anise in an ungreased frying pan. In the meantime, warm the wine in another pan. Do not bring to the boil !
Remove the spices from the pan. Crush the cloves and star anise, break the cinnamon sticks or crush the cinnamon buds. Add the spices to the warm wine and let it steep on the heat source for fifteen minutes with the lid closed. Then add the orange peels. Let the wine steep for another five minutes and then strain the spices and peels from the wine. Only now sweeten the wine as needed.
Serve the mulled wine nice and warm in a heat-resistant glass or cup.
