Ras al hânout (often spelled ras el hanout) is a spice blend with a rich tradition. Not five or seven flavors, as in many stripped-down versions, but welcoming and generous, "as much as possible."
Out of stock.
Râs al hânout loosely translates to "the best of the house" (la tête de l'épicerie) and is made with the finest spices available. Traditionally, these were spices from the region itself, later enriched through trade and travel with products from around the world, sometimes including very exotic ones like Spanish fly. Rest assured, our râs al hânout doesn't contain any.
The main flavourings in a traditional râs al hânout are, in alphabetical order:
- al-kababa (cubeb
pepper ) - asheb (asafoetida)
- mace
- dar felfell (kaapse lange
pepper ) - dar el cini (cassia cinnamon)
- elbzar (black
pepper ) - gouzt ettiab (nutmeg)
- habbt el mchebek (mustard seed)
- hil al habachi (kororima)
- khzama (lavender blossom)
- mgouza sahraouia (grain of paradise)
- allspice
- old and nouar (cloves)
- qâqulla (cardamom)
- qrçoub (turmeric)
- rous el ward (damascus rose)
- ginger
A whole range of powerful flavors, with blue iris root and tigernut being popular additions. These warm flavors are characteristic of what's called msâkhen in North Africa, which translates as "warmer" in the sense of an aphrodisiac, an aphrodisiac. Hence the name Spanish fly.
Smell and taste
The redder the râs al hanout, the spicier it will be, due to the red chili
The sweeter m'rouzia râs al hânout with very present cinnamon notes, is often associated with Moroccan cuisine (sweet dishes, but also dishes that incorporate sweet elements, such as tagines with lamb), l'msagna with Tunisian, and monusa with Algerian cuisine.
